Decanting
Decanting a wine is the process of pouring cellar-aged bottles into a glass decanter, in order to leave any sediment in the original bottle before serving.
Degorgement (French term)
Part of the process of making Champagne. After the neck of the bottle has been frozen, a plug of frozen wine containing dead yeast from the second fermentation is taken out out of the bottle.
Delicate
A tasting term used for wine demonstrating elegant but somewhat mild aroma and flavour  characteristics.
Depth, deep
A tasting term referring to a wine that fills the mouth with an intense flavour.
Dessert wine
Dessert wines refers mostly to fortified wines or to sweet white wines of 14% alcohol or greater which are typically served with dessert. Dessert wines are produced all around the world: Sauternes (Bordeaux), Tokaji Aszú (Hungary), Beerenauslese, Trockenbeerenauslese in Germany and Austria, Ice wine (Canada) or Commandaria (South Africa).
Destemming
Destemming is the process of removing the stems from the grape before fermentation.
Devatting
Devatting consists in the process of separating the must from pomace (skins and stalks).
Dirty
Tasting term describing undesirable odours that can be present in a wine.
Domaine (French term)
French term for a wine estate.
Double magnum (French term)
A double magnum is a large bottle format equivalent to four 0.75 litres bottles.
Doux (French term)
Doux is the French term for sweet.
Downy mildew
Downy mildew is a common but devastating vine disease due to excessive humid and warm weather conditions.
Dry
Dry wines have very low levels of residual sugar. When used as a tasting term, it also describes the lack of a sweet taste in a wine when it refers to the dry, puckering sensation the wine imparts.
Dumb
Tasting description referring to young wines with yet-to-develop flavours and aromas.
