Ullage
Term used to describe the pocket of air between the top of the wine
and the bottle's cork. A large ullage may result in a deterioration of the wine through
oxidation. Ullage is also known as
the unfilled space of air in a
barrel |

Underipe
Underipe is the wine's flavour when grapes that fail to reach
optimum maturity are vinified. |

|
Unfiltered
A wine that has not been filtered
before bottling and contains dead
yeast cells and other sediments.

Unfined
Describes a wine where floculant coagulants, such as egg white or
bentonite have not been added to the
