Ullage
Term used to describe the pocket of air between the top of the wine and the bottle's cork. A large ullage may result in a deterioration of the wine through oxidation. Ullage is also known as the unfilled space of air in a barrel
Underipe 
Underipe is the wine's flavour when grapes that fail to reach optimum maturity are vinified.
Unfiltered
A wine that has not been filtered before bottling and contains dead yeast cells and other sediments. See other clarifying processes such as "fining".
Unfined
Describes a wine where floculant coagulants, such as egg white or bentonite have not been added to the barrel in order to remove suspended solids. See other clarifying processes such as "fining".
Unoaked
Unoaked refers to wines that have been matured without contact with oaked aging barrels.
