Vanilla
Aroma detectable in the "nose" of a wine. A vanilla flavour is often due to the wine's ageing in oak barrels.
Vanilllin
Flavour contributed by oakwood barrels.
Varietal
Varietal wines are primarily made from a single variety of grape.
Vegetal
Tasting term close to grassy.
Vendange
French term meaning harvest which consists in gathering a ripe crop from the vineyard.
Vendange tardive (VT)
French term for late harvest.
Vertical and horizontal wine tasting
In a horizontal tasting, the wines are all from the same vintage but are from different wineries. This type of tasting helps to emphasize differences in winery styles.
In a vertical tasting, different vintages of the same wine type from the same winery are tasted. This emphasizes differences between various vintages from the same winery. See tasting flight.

French term for old vines.
Vigne
French term for vine.
Vigneron
French term for vine grower which can also be the winegrower.
Vignoble
French term for vineyard.
Vin
French term for wine.
Vine (vitis vinifera)
The plant on which grapes grow.
Vineyard
Land on which cultivation of the grape (viticulture) is implemented for wine making purposes.
Viniculture
The cultivation of the grape and the science of making wine. Close to oenology.
Vinification
The process of wine production from grape juice into bottled finished wine.

Vinous
A general term describing anything characteristic of wine. Also describes a pleasant wine.
Vintage
Vintage, in winemaking, is the year in which a particular wine's grapes were harvested.
Viticulture
French term for the vineyard management, i.e. monitoring pests, fertilizing, canopy, and harvest.

Vitis vinifera
A breed of grapes native to Europe, i.e.  Cabernet, Merlot etc..
Volatile acidity

Volatile acidity represents the level of acetic acid present in a wine.
